So, enough pretending it is summer with the ice cream. Time for some warm soup again! This minestrone turned out to be very delicious. You can add whatever you would like. This turned out to be a very hearty soup. Perfect for this winter weather!
7 cups of chicken stock
(We used 7 cups of water and Better Than Bouillon, All Natural/Low Sodium
Chicken Base to create the stock.)
1 sweet onion
2 cloves of garlic
3 large carrots
2 Red potatoes
4 vine ripe tomatoes
1 can of diced tomatoes (no salt added)
1 half of 15 ounce can of tomato sauce
3 cups of uncooked Spinach
1 can of Cannellini beans - Rinsed and drained.
1 can of Dark Red Kidney beans - Rinsed and drained
1/2 (maybe a little less than 1/2) box of Ditalini pasta
Season with:
Kosher salt
Fresh cracked black pepper
Red pepper flakes
Madras curry powder
Paprika
Start by simmering your chicken stock on the stove. While it is simmering dice your onions, slice your carrots, crush your garlic, and add them to the pot. Then add the half can of tomato sauce and let the mixture cook on low to medium heat. Next add your diced tomatoes, potatoes, spinach, and beans. Keep the mixture on medium heat until your potatoes start to soften. Then you can turn the heat low and let it cook for as long as you would like. I seasoned the soup with Kosher salt, fresh cracked pepper, red pepper flakes,
a touch of paprika and a touch of Madras curry powder. You can season with whatever you would like to cater to your taste. When you are ready to eat the soup turn the heat back up and bring it to a low boil adding the pasta. You can turn it back down to low when the pasta is starting to get to al dente status. Then continue to cook on low until the pasta is cooked to your liking. We topped our individual bowls of the minestrone with a little shredded parmesan cheese! Hope you enjoy!

Last week we were in Savannah. The weather was warm and around 70 degrees. It made us think of summer and what says summer more than key lime! This is a yummy dairy free ice cream and it is sure to remind you of those long summer days.
2 15-ounce cans of coconut milk (select a high quality, high fat content
brand. Should be thick when opened.)
1 cup of raw sugar.
1 teaspoon of vanilla
1 bag of key limes
Mix coconut milk with raw sugar. Add vanilla and key lime juice to taste.
Chill mixture in refrigerator for minimum two hours.
Prepare using directions on ice cream maker.

20oz Package of ground turkey
1 Cup panko bread crumbs
1/2 Sweet Onion - Chopped
1 Egg - Beaten
Few fresh basil leaves - Chopped
4 Twists of fresh cracked pepper
Put all ingredients into a bowl and mix thoroughly with hands. Then round into golf-ball sized balls in your hand. Grease a large pan with Olive Oil and place all meatballs into the pan over medium heat. Flip and rotate as needed with tongs to get all sides browned and centers cooked.

Every once in a while I want to post a sweet treat for everyone, since my real passion lies with baking! I just can't bake all of the time, because that means I will be eating baked goods all of time. That would not be good, haha. This recipe came from The Pioneer Woman.
These cookies were amazing! I am allergic to nuts so they were omitted. I also made some other changes. Here is how I made them.
1 Cup of Butter
1 Cup of Brown Sugar
1 Cup of Sugar
2 Eggs
1 Teaspoon of Vanilla
1 1/2 Cup of All - Purpose Flour
1 Teaspoon of Salt
1 Teaspoon of Baking Soda
3 Cups of Regular (non quick) oats
1 Dash of Nutmeg (or to taste)
1 Teaspoon of Cinnamon (or to taste)
First mix butter and sugars. While they are mixing in a separate bowl beat the eggs and vanilla together. Then add the eggs and vanilla to the butter and sugar. While they are mixing, in another bowl combine the flour, salt, baking soda, nutmeg, and cinnamon. Slowly add this to the butter, sugar, and egg mixture. Finally, add the oats in. Refrigerate dough for about 30 min and bake at 350 for around 10 min. Keep a watch on them, mine cooked up pretty fast!

1 whole cabbage
10 small carrots
4 small zucchini
8 red or new potatoes
1 lb of green beans
2 large fresh leaves
2 cans of tomato sauce
3 cups of chicken stock (or vegetable stock)
1 cup of water
Olive oil
Garlic Powder
Chili Powder
Red Curry Powder
Madras Curry Powder
Paprika
Kosher Salt
Fresh cracked black pepper
Red pepper flakes
Circle the bottom of your large pot with olive oil, add chicken stock, water, two cans of tomato sauce, and chopped up basil leaves. Season with fresh cracked black pepper, garlic powder, and dash of kosher salt. Let this stock cook on the stove on low heat while you was and prepare your vegetables.
Next wash your potatoes, leave the skins on and boil in a separate pot until they become tender. Meanwhile, chop the rest of veggies up in equal sizes so they cook evenly and add them to the stock. When your potatoes are tender remove them from the heat chop them up and add them to the stock also. Season to taste with madras curry powder, red curry powder, paprika, chili powder, more fresh black pepper, and for those who like a little spice, a few red pepper flakes.
I let my soup cook for about 7 hours on the lowest heat. Seasoning throughout the day. It was great smelling it all day long! You don't have to cook it for that long though, just until all of the veggies are cooked. Enjoy!
